As any ‘on a deadline’ author can tell you, we’re really, really good at procrastinating. We tidy drawers, organize closets, poke around in our flower beds. And we cook. One of my favorite recipes was handed down by my Italian grandmother’s family. I hope you’ll enjoy it, too!
NONNA’S AUTHENTIC SPAGHETTI SAUCE
|2 – 6 oz. cans tomato paste
1 – 28 oz. can tomato puree
1 – 28 oz. can crushed tomatoes
2 cloves garlic, crushed½ cup chopped onion
2 ½ tbsp. extra virgin olive oil
1 tbsp. lightly-salted butter
|1 tsp. black pepper
1 tbsp. basil
1 tsp. oregano
½ tsp. thyme leaves
½ tsp. rosemary leaves
½ cup dry red wine (optional)½ lb. lean ground beef (optional)
¾ cup water
- First, you’ll need a large stockpot.
- Melt butter over low to medium heat, and add olive oil.
- Sauté onions until opaque (about 4 minutes).
- Add garlic and sauté an additional 2 minutes.
- Add water tomato paste and puree, and mix thoroughly.
- Add the spices and herbs, making sure to mix well.
- Simmer, loosely covered, for 2 ½ hours.
- IF YOU’RE ADDING GROUND BEEF, brown it in a medium-sized frying pan. When it’s well-crumbled, drain fat and add meat to sauce.
- IF YOU’RE ADDING WINE, do it now.
- IF YOU PREFER YOUR SAUCE ON THE THIN SIDE, ADD ¼ TO ½ CUP WATER.
- Simmer an additional 30-45 minutes.
Serve over your choice of cooked pasta, with or without sides, top with shredded Mozzarella or Parmesan, and enjoy!
